10 Minute Black Bean & Corn Quesadillas

Lately i'm all about super quick dinners for the week. After a long day of work, no one really wants to slave in kitchen for another hour making a delicious meal.

But i still am not a fan of quick dinners with absolutely no flavor - this dinner is so quick, filling & delicious.

Ingredients:
-1 (15oz) Can Black Beans, rinsed & drained
-1 Cup Corn
-1/3 Cup Salsa (i used Guacamole Salsa, but you can use whatever flavor you'd like)
-2t Taco Seasoning
-1/4 Cup Cilantro or Green Onion (optional)
-1 Cup Shredded Cheese (your choice, i used Colby Jack)
-Tortillas (i used Spinach, but again, your choice)

Directions:
-In a medium bowl, mix together beans, corn, salsa, taco seasoning & cilantro.

-Preheat a large skillet over medium-low heat, sprayed with cooking spray.

-Place one tortilla in the skillet & scoop 1/2 Cup of the filling onto the tortilla in the pan. Sprinkle 1/4 Cup cheese over the bean mixture & place the second tortilla on top of the cheese. Press down on the top tortilla, so the cheese will make them stick together.

-When the bottom tortilla begins to brown, flip the quesadilla over until both tortillas are lightly browned & crispy & the cheesy filling has melted.

-Cut into wedges if desired & enjoy!

The flavors all blend together, & if you want to get really crazy, add some shredded chicken! Boom, dinner is done. Everyone will love it!

White Chocolate Chip & Cranberry Cookies

I was craving a cookie but didn't want an old fashion chocolate chip, or something over powering with sweetness. I had all of these ingredients just sitting in my pantry waiting for me to use to make something quick & delicious.  I would say they're healthy for you since i used dried cranberries...but i feel like that would be pushing it :-P Ingredients: -3/4 cup softened butter -3/4 cup brown sugar -1/2 cup white sugar -1 egg -2t vanilla -1 3/4 cup flour -1/4t salt -1/2t baking soda -1 cup dried cranberries -1 cup white chocolate chips Lets get this party started: Preheat oven to 350 Blend butter, sugars, egg & vanilla until smooth.  Stir in flour, salt & baking soda (it gets pretty stiff). Add white chocolate chips & cranberries. (at this point i just hand stirred everything in instead of having the dough get stuck to the whisks on the electric mixer). Drop by rounded teaspoons on baking sheet, space them about...

Crockpot Creamy Tortellini Soup

This is a good recipe to start off fall with! I made this last Sunday for an easy dinner to just throw in the Crockpot and just walk away for the day and it was mighty tasty! And I had almost everything I needed already at home! (But there's always that one you have to go to the store to, because it would just be TOO easy to have everything). Ingredients: 1# ground Italian Sausage, browned 1 yellow onion, chopped 2 large carrots, chopped 2 stalks celery, shopped 4 gloves garlic, minced 1T Italian seasoning 2t beef bouillon powder (this is usually in the soup aisle at the grocery store if not in the spice section) 1/2t salt 4 cups beef broth 1/4 cup cornstarch mixed and dissolved in 1/4 cup water 3 cups of half and half 1 - 12oz package three cheese tortellini (or whatever flavor you prefer) 1 package of fresh baby spinach (the smaller bag) Crock it like it's hot: Brown the sausage (and drain) and put it in the Crockpot. Place the onion, carrots, celery, ga...

A "little bit of everything" cookie

I know it's been a while, but I try to get on here as much as I can, and sadly it's not as much as I wish I could be.  I had some spare time tonight though and thought it was time for some cookies to be made! I have another dinner recipe I want to share, "Drunken Pork chops" but i'll get to that another time. Cookies are way more important!  A "little bit of everything" cookie Ingredients: 3 c flour 1 T baking powder 1 T baking soda 1 T cinnamon 1 t salt 1 1/2 c butter (room temp) 1 1/2 c sugar 1 1/2 c brown sugar 3 eggs  1 T vanilla 3 c semisweet chocolate chips 3 c old-fashioned rolled oats 2 cups sweetened coconut flakes Preheat oven to 350. In a large bowl, mix together the flour, baking powder, baking soda, cinnamon and salt. Set aside. In another bowl (a LARGE one), beat the butter until smooth. Add the sugar and brown sugar and beat for 2 minutes. Add the eggs, one at a time, beating well after each...
