Easiest Quinoa "Salad"

Who doesn't like a 5-ingredient dinner/snack? Granted, there could be a little more prep time depending on what you have laying around but for a mom that's always on the go with Baseball Practice and who knows what else...this is perfect.

I cooked my Quinoa in my rice cooker, it was super easy to just dump it in there and walk away. If you don't have a rice cooker, just follow the instructions on the back of the bag. You can find Quinoa in the rice section of the grocery store usually, if not there check by the Organics.

Side note: Whether I cook my Quinoa in a pot or in my rice cooker, I always cook it in Chicken Broth, adds more flavor! You'll notice the difference between water and Chicken Broth, I promise!

If you have some cooked chicken already, perfect. If not, I usually get a rotisserie chicken and just shred it. Luckily, Matthew's mom has been buying me whole chickens and cooking them in the crockpot for me (because she's awesome) and then sending the shredded chicken home for me to use and freeze!

Are you ready? I promise you, it may seem simple...but it's so tasty!

If you're feeding 3+, double the recipe.

Ingredients:

  • 1 cup Quinoa (make sure to rinse it first, which is a chore because half of it falls out of the bottom of your strainer...)
  • 1/2 can whole corn
  • 1/2 can black beans
  • shredded chicken
  • Spices of your choosing - I use salt, pepper, garlic powder and some red pepper flakes for a kick!

Ready, set, mix!
  • Either cook your Quinoa per instructions on the bag, or in a rice cooker and let it cool for about 15 minutes after it's done.
  • Throw it in a bowl, then mix everything else together (I just taste test on the amount of spices I want) and then...you're done.
I know you're thinking, wait, you're done? Hah! I wouldn't call this an entire meal for the family, but it definitely is a good quick lunch to bring with you to work, school, wherever you are going. And tonight, it's my dinner since Matthew is at school, Aidin is with his dad and it's just me eating so...this is perfect! Such a simple, easy recipe to do.

*If you're feeling extra sassy, throw some avocado in there as well. That extra pop of color is great on the eyes, and on the taste buds! I'm a space cadet and forgot to grab them when I was grocery shopping tonight. Feel free to add whatever other vegetable you want. this is yours to play around with.

White Chocolate Chip & Cranberry Cookies

I was craving a cookie but didn't want an old fashion chocolate chip, or something over powering with sweetness. I had all of these ingredients just sitting in my pantry waiting for me to use to make something quick & delicious.  I would say they're healthy for you since i used dried cranberries...but i feel like that would be pushing it :-P Ingredients: -3/4 cup softened butter -3/4 cup brown sugar -1/2 cup white sugar -1 egg -2t vanilla -1 3/4 cup flour -1/4t salt -1/2t baking soda -1 cup dried cranberries -1 cup white chocolate chips Lets get this party started: Preheat oven to 350 Blend butter, sugars, egg & vanilla until smooth.  Stir in flour, salt & baking soda (it gets pretty stiff). Add white chocolate chips & cranberries. (at this point i just hand stirred everything in instead of having the dough get stuck to the whisks on the electric mixer). Drop by rounded teaspoons on baking sheet, space them about...

No Bake Peanut Butter Cookies

I'm not going to lie, I had no idea what a "no bake" was until a friend of mine told me his favorite cookies were no bakes (this was around Christmas time when I go cookie crazy!). So I looked up a recipe and ended up falling in LOVE with them. They're so quick to make. This recipe here took me (start to finish) 20 minutes to do. So if you want something sweet and have nothing in the pantry to snack on, just whip these up super quick (because you should have everything you need already at home!) and enjoy! No Bake Peanut Butter Cookies Ingredients: - 2 cups sugar - 1/4 cup margarine - 1/2 cup milk - 1 cup peanut butter - 1t vanilla - 3 cups rolled oats (old fashioned) In a large saucepan, mix sugar, margarine and milk; bring to a full rolling boil over medium heat.  Boil for one minute, stirring constantly.  Remove from heat and stir in peanut butter and vanilla, stirring until peanut butter is melted; stir in oats. Working quickly, drop spoonfuls on...

A "little bit of everything" cookie

I know it's been a while, but I try to get on here as much as I can, and sadly it's not as much as I wish I could be.  I had some spare time tonight though and thought it was time for some cookies to be made! I have another dinner recipe I want to share, "Drunken Pork chops" but i'll get to that another time. Cookies are way more important!  A "little bit of everything" cookie Ingredients: 3 c flour 1 T baking powder 1 T baking soda 1 T cinnamon 1 t salt 1 1/2 c butter (room temp) 1 1/2 c sugar 1 1/2 c brown sugar 3 eggs  1 T vanilla 3 c semisweet chocolate chips 3 c old-fashioned rolled oats 2 cups sweetened coconut flakes Preheat oven to 350. In a large bowl, mix together the flour, baking powder, baking soda, cinnamon and salt. Set aside. In another bowl (a LARGE one), beat the butter until smooth. Add the sugar and brown sugar and beat for 2 minutes. Add the eggs, one at a time, beating well after each...
