Homemade Snickers Bars

Now i'm just going to start this off letting you know this recipe is easy, but it will take most of your day to finish the bars. The outcome though is totally worth it. They taste exactly like a regular snickers. And you don't feel as  bad for eating a couple of these bars because they aren't as big, but they are filling!


Bottom Chocolate Layer:
1 1/4 cups milk chocolate chips
1/4 cup peanut butter


Thoroughly grease your baking pan (9 x 13). Melt ingredients together in a saucepan (or microwave) then pour into the baking dish and spread until even. Let cool and harden completely. 


Nougat Layer:
1/4 cup unsalted butter
1 cup sugar
1/4 cup evaporated milk
1 1/2 cups marshmallow fluff
1/4 cup peanut butter
1 1/2 cups salted peanuts, chopped
1 t vanilla extract


Melt the butter in a saucepan over medium heat. Add in sugar and milk, stirring until dissolved and bring to a boil. Let cook for 5 minutes, stirring occasionally. Add in fluff, peanut butter and vanilla, stirring until smooth. Turn off heat and fold in peanuts, then pour over bottom chocolate later. Let cool completely. 


Caramel Layer:
1 14oz bag of caramels
1/4 cup whipping cream


Combine ingredients in saucepan over low heat. Let melt, stirring occasionally until smooth - this took about 10 minutes. Pour over nougat layer and let cool completely. 


Top Chocolate Layer:
1 1/4 cups milk chocolate chips
1/4 cup peanut butter. 


Melt ingredients in saucepan (or microwave), then pour over caramel and spread until even. Let cool and harden completely. 


Refrigerate for at least one hour before serving, then cut as desired. These can stay at room temp, but they do get gooey. I like them refrigerated, but let them sit on the counter for at least 5-10 minutes before biting into them because they do get pretty hard in the fridge.

The Best Chicken Enchiladas

The title to this recipe does not lie. These are, by far, the most amazing chicken enchiladas you will ever put into your mouth. Fried Rice

Ya'll need an easy, delicious dinner for the week night that feeds a lot? Make some of this fried rice. It's so easy and makes a great side or just a meal all in it's own. I made pork chops to go along with it and cut it into chunks and just threw them in at the end and it worked out perfectly. But I took just the leftover fried rice to work with me the next couple of days after that for lunch and I couldn't get enough.
