Popcorn Cake

I'm a true lover of all things rice krispie. It'd be an understatement to say I have one at least once a day. I buy them in bulk at Costco, yes I know I have a problem.

These are a nice twist to your rice krispie treat though. All the same ingredients, just made with popcorn instead. Think of an extremely large popcorn ball, with a little extra yum in them.

Warning: This is a sticky mess when trying to make them, as is anything when you are using melted marshmallows. Make sure you have a large enough bowl to fit two bags of popcorn and mixing room.

Ingredients:
  • 2 bags microwave popcorn, popped (try to get all the kernels removed, personally I LOVE the unpopped kernels but I can understand someone not wanting to break their tooth).
  • 2 cups M&M's
  • 1 1/2 cups broken pretzel sticks (I just poured some into a ziplock bag and crushed them up). 
  • 16oz mini marshmallows (8 cups)
  • 1/2 cup butter (1 stick)
Time to get messy:

1.     Spray a large bundt pan with cooking spray. 
2.     Pop 2 bags of buttered microwave popcorn and put them in a large bowl. Pick out the kernels that didn't pop. 
3.     Mix 2 cups of M&M's and 1 1/2 cups of broken pretzel sticks into the popcorn. 
4.     Melt 1 stick of butter over low heat in a large saucepan.
5.     When melted, add 8 cups of mini marshmallows and stir until melted and smooth, then remove from heat. 
6.     Allow it to cool for 2 minutes, while stirring constantly. Then pour it over your popcorn mixture.
7.     Stir until all the ingredients are combined. Make sure to coat everything at the bottom of the bowl too!
8.     Press the mixture into your bundt pan and cover with foil. Let it sit for at least an hour to cool. 
9.     When ready to serve, loosen the sides with a butter knife and flip it over onto a cutting board. Cut it into cake slice pieces and serve!


I enjoyed these a lot. The clean up was a little bit of a pain, but they were definitely worth it. It was a fun change from a rice krispie, and the M&M plus pretzel mixture added some fun texture. I ate way too many this afternoon watching the football game (GO HAWKS!) than I needed to. Next time I'll find some fun other candies to add in, maybe reese's pieces?

Easiest Quinoa "Salad"

Who doesn't like a 5-ingredient dinner/snack? Sticky Bun Breakfast Ring

Just baked this recipe this morning! How delicious!! Super easy to make (which is what i'm all about) and tastes like it just came from some professional bakery! Sticky Bun Breakfast Ring Ingredients: - 1 tube Pillsbury Grands buttermilk biscuits - 3 T butter, melted - 1/2 cup pancake syrup - 1/3 cup packed brown sugar - 1/2 t cinnamon - 1/4 cup chopped pecans (opt.) Spray fluted pan with non-stick spray. Combine melted butter and syrup in small bowl and set aside. In another bowl, combine the brown sugar, cinnamon and nuts.  Place half of the syrup mix on the bottom of the pan. Then sprinkle half of the brown sugar mix on top.  Lay the buscuits on the bottom of the pan, overlapping edges to form a ring.  Top with remaining syrup and sugar mix.  Bake at 375 for 20 minutes.  Cool for 1 minute and enjoy!

Crockpot Creamy Tortellini Soup

This is a good recipe to start off fall with! I made this last Sunday for an easy dinner to just throw in the Crockpot and just walk away for the day and it was mighty tasty! And I had almost everything I needed already at home! (But there's always that one you have to go to the store to, because it would just be TOO easy to have everything).
