Cinnamon Swirl Banana Bread

I make a mean banana bread. I mean, it melts in your mouth when you eat it. And the loaf is usually gone by the  next morning after breakfast.

When I saw a recipe that added cinnamon and sugar to it, I thought "Something that can make my banana bread even better?! Impossible!" Oh...it was possible. These two ingredients added to this perfected banana bread recipe is just the icing on the cake (or topping on the banana bread).

Cinnamon Swirl Banana Bread

For the bread:
- 3 over-ripe bananas, smashed up
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1t vanilla
- 1t baking soda
- dash of salt
- 1 1/2 cups flour

For the swirl:
- 1/3 cup sugar
- 1 T cinnamon

1. Preheat oven to 350. Spray a 9 x 5 pan with non-stick spray.
2. Mix bananas, butter, sugar, eggs and vanilla together. Sprinkle baking soda and salt around the top of the banana mixture. Then gently stir in the flour. Careful not to over-mix!
3. In a small dish, mix together the swirl ingredients.
4. Add 1/2 of the patter to the loaf pan, and then sprinkle half of the swirl mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover swirl mix on top.
5. Bake for 50-60 minutes.

The smell of this bread when it's baking is phenonminal. So mouth-water you'll want to have at least 2 slices once it comes out. It's extremely moist, which is good so then I don't have to glob on the butter. Never again will I make just regular banana bread.

*A fun twist, add 1/2 cup of chocolate chips to your batter! Yum!

Easiest Quinoa "Salad"

Who doesn't like a 5-ingredient dinner/snack? Granted, there could be a little more prep time depending on what you have laying around but for a mom that's always on the go with Baseball Practice and who knows what else...this is perfect. I cooked my Quinoa in my rice cooker, it was super easy to just dump it in there and walk away. If you don't have a rice cooker, just follow the instructions on the back of the bag. You can find Quinoa in the rice section of the grocery store usually, if not there check by the Organics. Side note : Whether I cook my Quinoa in a pot or in my rice cooker, I always cook it in Chicken Broth, adds more flavor! You'll notice the difference between water and Chicken Broth, I promise! If you have some cooked chicken already, perfect. If not, I usually get a rotisserie chicken and just shred it. Luckily, Matthew's mom has been buying me whole chickens and cooking them in the crockpot for me (because she's awesome) and then sending
