Chicken & Broccoli Alfredo

Super easy & yummy week day dinner. As long as you have some pre-cooked chicken & broccoli lying around, wont take long at all. 

A lot healthier for you too, since most alfredo is made from cream cheese & butter, this doesn't use either of those & has amazing flavor. 

Ingredients:
-3 Boneless, Skinless Chicken Breasts, grilled & cut into chunks
-2 Cups Roasted Broccoli (i just tossed mine in oil & garlic & threw it in the oven at 350 for 15 minutes)
-8oz Fettuccine
-2T Olive Oil
-2t Minced Garlic
-2T Flour
-1 Cup Chicken Broth
-1/4 Cup Greek Yogurt (not flavored)
-1/4 Cup Skim Milk
-1/4t Pepper
-1 Pinch Nutmeg
-Grated Parmesan Cheese

Directions:
Cook Pasta according to directions. Drain & set aside. 

In a medium saucepan, heat the olive oil & add garlic, cook until the garlic is golden.

Whisk flour until smooth. Gradually whisk in the chicken broth, greek yogurt, milk, pepper & nutmeg. Bring to a low boil, stirring constantly. Lower the heat & simmer until the mixture thickens. Stir in parmesan cheese to whatever your taste preference is. I almost use an entire package, but i love cheese. 

Add the cooked chicken & broccoli to sauce mixture, followed by the cooked pasta. Toss to combine & service with more parmesan on top. 

Serve with some garlic bread & you are done!!

Who doesn't like a 5-ingredient dinner/snack? Granted, there could be a little more prep time depending on what you have laying around but for a mom that's always on the go with Baseball Practice and who knows what else...this is perfect. Sticky Bun Breakfast Ring

Just baked this recipe this morning! How delicious!! Super easy to make (which is what i'm all about) and tastes like it just came from some professional bakery! Sticky Bun Breakfast Ring Ingredients: - 1 tube Pillsbury Grands buttermilk biscuits - 3 T butter, melted - 1/2 cup pancake syrup - 1/3 cup packed brown sugar - 1/2 t cinnamon - 1/4 cup chopped pecans (opt.) Spray fluted pan with non-stick spray. Combine melted butter and syrup in small bowl and set aside. In another bowl, combine the brown sugar, cinnamon and nuts.  Place half of the syrup mix on the bottom of the pan. Then sprinkle half of the brown sugar mix on top.  Lay the buscuits on the bottom of the pan, overlapping edges to form a ring.  Top with remaining syrup and sugar mix.  Bake at 375 for 20 minutes.  Cool for 1 minute and enjoy!

Crockpot Creamy Tortellini Soup

This is a good recipe to start off fall with! I made this last Sunday for an easy dinner to just throw in the Crockpot and just walk away for the day and it was mighty tasty! And I had almost everything I needed already at home! (But there's always that one you have to go to the store to, because it would just be TOO easy to have everything). Ingredients: 1# ground Italian Sausage, browned 1 yellow onion, chopped 2 large carrots, chopped 2 stalks celery, shopped 4 gloves garlic, minced 1T Italian seasoning 2t beef bouillon powder (this is usually in the soup aisle at the grocery store if not in the spice section) 1/2t salt 4 cups beef broth 1/4 cup cornstarch mixed and dissolved in 1/4 cup water 3 cups of half and half 1 - 12oz package three cheese tortellini (or whatever flavor you prefer) 1 package of fresh baby spinach (the smaller bag) Crock it like it's hot: Brown the sausage (and drain) and put it in the Crockpot.
